CREAMY MUSHROOM PASTA✨

this creamy mushroom pasta recipe is one of my easiest & tastiest recipes to date! if you love creamy mushroom- you will absolutely love this recipe! also perfect for the holidays 🤤 find the recipe below enjoy xx 

Ingredients 
• 1 cup @a2milkcanada 
• 2 packages cremini mushrooms 
• 1/2 stick unsalted butter 
• 1 cup chicken stock 
• 2-3 bunches thyme 
• 1 package pasta of choice 
• 1/2 tsp nutmeg 
• ¼ lemon
• ½ white onion, diced 
• 2 tbsp cornstarch combined with 1 tbsp water (if pasta sauce it too liquidy) 
• Salt & pepper 
• 1 cup parmesan cheese 
• Italian parsley to garnish, chopped

Directions 
 
1. Bring a large pot of salted water to boil. Add in pasta and cook according to box instructions. Reserve ½ cup pasta water and set aside. 
2. In a large pan, melt butter over med-high heat and add in onion. Once onion is soft, add in mushrooms and thyme. Season with salt & pepper. Once mushrooms are soft and cooked down, add in a2 Milk, chicken stock and nutmeg. Mix together until combined and make sure to stir constantly. Cook for 8-10 minutes on low-medium heat and add in ½ cup parmesan, nutmeg and season with salt & pepper. Once pasta is cooked, assess pasta sauce and if it is too liquidy combine cornstarch with water to form a paste and add to sauce. Sauce should thicken until desired. Once thickened, add in pasta and mix together until pasta is evenly coated. 
3. Add pasta to bowls and top with black pepper, parmesan and parsley. Serve and enjoy!
