1 HR SWEET POTATO STACK✨

Have you seen the viral 15 hr potato on TikTok? It’s all over my feed so naturally I had to make it, but put my own spin on it! I definitely didn’t want to wait 15 hrs to make these crispy taters so I made it in under an hour & with sweet potatoes! At first, it was difficult trying to perfect this recipe, but with a few tries my fiancé and I finally got it! try it out for yourself and let me know what you think. Find the recipe below enjoy xx (IB: @moribyan)

1 hr Sweet Potato Stack

4 sweet potatoes, very thinly sliced
2 cups all purpose flour
1/4 cup olive oil
1 tsp cinnamon
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/4 cup vegetable oil (enough oil to cover the potatoes)
1/4 cup Parmesan cheese
Salt & pepper

1. Wash & peel sweet potatoes. Carefully slice with mandolin. Add potatoes to a bowl and add olive oil & seasonings. Mix together until all potatoes are coated.
2. Make a stack with the potatoes (10-12 slices) until all potato slices are used. Cut off ends to make a square. Add flour to shallow bowl & season with salt & pepper. Add potato stacks to flour and coat evenly. Shake off excess flour and add to plate. Repeat.
3. Add vegetable oil to skillet over med-high heat. Once oil is shimmering add in potato stacks. Fry for 4-5 minutes per side until golden brown. Once potato is cooked, add to wire rack and season with salt.
4. Plate potato stacks and top with Parmesan cheese & black pepper. Serve with spicy Mayo and enjoy!
