BLUEBERRY LEMON BAKED OATS WITH HOMEMADE LEMON YOGURT GLAZE✨ 

You need to try my blueberry baked oats topped with a homemade lemon yogurt glaze- this may be your new go-to breakfast! these baked oats are so incredibly tasty- you can even serve them as dessert! (And they also remind me of a blueberry muffin) 😋 find the recipe below, enjoy xx 

Blueberry Lemon Baked Oats with Lemon Yogurt Glaze 
Serves 2 

Ingredients
Baked Oats 
2 cups oats 
2 tbsp maple syrup 
2 eggs 
2 ripe bananas 
2 tsp baking powder 
1 tsp salt 
Zest from 1 lemon 
1 cup blueberries 
Lemon Yogurt Glaze 
1/4 cup plain Greek yogurt 
2 tsp lemon juice 
2 tbsp powdered sugar (or maple syrup) 
2 tsp lemon zest 

Directions 
1. Preheat oven to 350F degrees. Line a large baking sheet with parchment paper. Spray ramekins with cooking spray and set aside. 
2. Add all baked oats ingredients except for the blueberries into a blender and blend until mixture is smooth. Add blueberries to mixture and mix together until combined. 
3. Add mixture to ramekins (don’t fill right to the top) and top with 4-5 blueberries. Bake for 35-40 minutes. 
4. In a small bowl, combine all ingredients for lemon yogurt glaze. If mixture is thick, keep adding lemon juice to thin it out. 
5. Remove baked oats from oven and drizzle lemon yogurt glaze all over. Serve immediately and enjoy!
