EXCITING NEWS! @fodyfoods launched their NEW vegan bolognese and it came right in time for summer-inspired pasta dishes! Ingredients
Serves 4

1/2 cup Fody Vegan Bolognese 
1 tsp Fody Garlic Infused Olive Oil 
1 package Jumbo Pasta Shells- you can use Tinkyada Brown Rice Pasta Shells
1/2 cup ricotta cheese 
1 egg
1/2 cup parsley, chopped 
1 tsp salt
1 tsp black pepper 
1 cup shredded mozzarella 
1/4 cup parmesan cheese 

Directions
1. Preheat oven to 375F degrees. Bring a large pot of salted water to boil. Add pasta shells and cook according to box instructions. 
2. In a medium bowl, mix together ricotta, egg, parsley, salt, pepper and mozzarella cheese. Mix together until combined. Add mixture to large ziplock bag and cut one of the corners to create a 'piping bag'. 
3. Add Fody Olive Oil & Vegan Bolognese to the bottom of the baking dish. Make sure the bottom of the baking dish is covered. Pipe ricotta mixture into each large pasta shell. Repeat until all pasta is used. Top with mozzarella & parmesan cheese and cover with tin foil. Bake for 25-30 minutes. Remove tin foil and bake for another 5-10 minutes. 
4. Remove from oven and let sit for 5 minutes. Garnish with chopped parsley. Serve and enjoy!
