BALSAMIC STRAWBERRY & CHICKEN SALAD✨

happy friday! anyone else feel like this week has gone by SO quickly? Although I must say that I am ready for the weekend! this weekend I’ll definitely be making my balsamic strawberry chicken salad that’s perfect for those summer days 😊 find the recipe below enjoy xx 

Balsamic Strawberry & Chicken Salad 
Serves 2 

Ingredients
2 cup arugula 
2 cups strawberries, sliced 
3 tbsp Fody Balsamic Dressing 
1/2 cup fresh mozzarella
4 tsp pumpkin seeds
1 1/2 cups tri color grape tomatoes 
1 tbsp Fody Garlic-Infused Olive Oil
2 chicken breasts

Directions
1. Preheat oven to 350F degrees. Line baking sheet with parchment paper. Add chicken breast to a ziplock bag and add Fody Balsamic dressing. Close bag and let marinate in the fridge for minimum 30 minutes. 
2. Add chicken to lined baking sheet and bake for 35-40 minutes. Flip half way. Make sure chicken is fully cooked before serving! 
3. Add arugula to a bowl and add halved tomatoes and sliced strawberries. Pull mozzarella into pieces and add to the salad. Top with pumpkin seeds. Add sliced chicken on top and drizzle Fody Balsamic Dressing. Toss salad and garnish with black pepper. Serve immediately and enjoy!
