BAKED FETA HONEYCOMB RIGATONI✨ 

I am obsessed with the honeycomb pasta trend! I decided to try it out with the baked feta pasta & it was so tasty! find the recipe below! enjoy xx 

Baked Feta Honeycomb Rigatoni
Serves 6 

Ingredients 
Baked Feta 
2 cups tri color grape tomatoes 
1/2 cup olive oil 
1 block feta cheese 
1 tsp salt 
1 tsp black pepper 
Honeycomb Rigatoni 
1 box rigatoni 
1 cup shredded mozzarella 
1/4 cup Parmesan 
1/4 cup basil, chopped 

Directions 
1. Preheat oven to 400F degrees. Line a baking sheet with parchment paper and set aside. Grease 9 inch spring pan and set aside. Bring large pot of salted water to boil and cook pasta al dente 8 mins. 
2. Add feta to the center of a baking dish and add tomatoes around the feta. Add olive oil on top of feta and tomatoes and add salt & pepper. Bake for 20-25 minutes until tomatoes are blistering. 
3. Remove tomatoes & feta from oven and add 1/2 the sauce to the bottom of the spring pan. Add cooked rigatoni (make sure it’s standing up) all around the pan to make sure it’s completely covered. Add the rest of the sauce & tomatoes on top of the pasta. Top with mozzarella & Parmesan. Bake for 15 minutes or until cheese is melted. Remove from oven and top with 2 tbsp of Parmesan cheese and fresh basil. Serve immediately and enjoy! *I recommend after cutting it to mix it all together to evenly distribute the sauce*
