GREEK PASTA SALAD✨ 

I promise I eat more than just pasta 😂 but seriously- this is one of my OG recipes that I was so excited to recreate and post on here! it’s an oldie, but a goodie. Find the recipe below, enjoy xx 

Greek Pasta Salad 
Serves 4 

Ingredients 
1 Box Rotini or penne Pasta⁣⁣
1 cup of cherry tomatoes, chopped in halves⁣⁣
1/2 cup of red onion, sliced thinly⁣⁣
1/2 cup of cucumber, diced⁣⁣
1/2 cup of black olives, chopped⁣⁣
1/3 cup of parsley, chopped⁣⁣
1/4 cup of lite feta, crumbled⁣⁣
Salt + pepper to taste⁣⁣
Greek Salad Dressing⁣⁣
1/3 cup of extra virgin olive oil⁣⁣
1/3 cup of red wine vinegar⁣⁣
2 tsp of dried oregano⁣⁣
2 tsp of Dijon mustard⁣⁣
1 tsp of garlic, minced⁣⁣ 

Directions 
1. Bring a large pot of salted water to boil. Cook pasta according to box instructions. Once pasta is cooked and strained add to a large bowl. 
2. Add chopped cherry tomatoes, black olives, red onions, cucumbers to the pasta and mix together. 
3. In a separate bowl, mix together all Greek salad dressing ingredients and once combined add on top of the pasta salad. Once pasta is evenly coated, add in feta, chopped basil and fresh lemon juice and mix. Top with black pepper and enjoy!
