ROSEMARY & PARMESAN SWEET POTATO FRIES✨ 

One of my favorite flavor combos is rosemary & Parmesan - so of course I had to top them with my homemade sweet potato fries! I also paired these delicious fries with a homemade spicy Mayo. This recipe is super easy, quick & healthy and the sweet potato fries come out crispy & delicious every time 😊 you can also make these in the air fryer! check out the recipe below! ps cannot believe it’s the first day of March! anyone else? xx 

Rosemary & Parmesan Sweet Potato Fries
Serves 4

Ingredients
4 sweet potatoes, peeled and sliced
1 tbsp olive oil
1/2 cup parmesan cheese, shredded 
2 tbsp fresh rosemary 
2 tsp salt 
1 tsp black pepper 
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
Spicy Mayo
1/4 cup lite mayo
2 tbsp sriracha 

Directions
1. Preheat oven to 400F degrees. Line a large baking sheet with parchment paper. Peel and slice sweet potatoes into fry shape pieces. Transfer fries to a large bowl. Add olive oil, salt, black pepper, parika, garlic and onion powder to the fries and toss until fries are evenly coated. 
2. Place fries on a baking sheet and make sure to spread them out. Bake for 30-35 minutes until potatoes are crispy. 
3. Remove from oven and top with freshly grated parmesan cheese and fresh rosemary. Serve with homemade spicy mayo (mix together spicy mayo and sriracha in a bowl). Enjoy!
