WHIPPED RICOTTA & ROSEMARY DIP WITH ROASTED TOMATOES✨ 

since my whipped feta dip went viral- I had to try out the recipe, but with a new cheese and this time I used ricotta! this whipped ricotta dip is delicious and I added fresh rosemary to the dip & roasted tomatoes, which really added an extra kick! pro tip: if you have leftover oil from the roasted tomatoes make sure to save it as it makes for a delicious rosemary-infused olive oil! check out the recipe below enjoy xx 

Whipped Ricotta & Rosemary Dip with Roasted Tomatoes 
Serves 4 

Ingredients 
Whipped Ricotta
475 g ricotta cheese 
1/4 cup olive oil 
1/4 cup cooking cream 
2-3 rosemary sprigs 
1 tsp salt 
1 tsp black pepper 
2 tbsp honey 
lemon zest 
Roasted tomatoes 
2 cups cherry tomatoes 
1/4 cup olive oil 
1 garlic clove, chopped 
1 tsp salt 
1 tsp black pepper 
2-3 rosemary sprigs 

Directions 
1. Preheat oven to 400F°. Add tomatoes to small baking dish and top with olive oil, rosemary, salt, pepper and garlic. Mix together. Bake for 20 minutes. 
2. In a food processor, add in ricotta cheese, olive oil and cooking cream. Process for 1-2 minutes. Remove lid and add in honey, rosemary, lemon zest, salt & pepper. Process for another 1-2 minutes until mixture is combined. Plate whipped ricotta dip. 
3. Remove tomatoes from oven and top in the center of the dip. Make sure to drizzle the oil from the tomatoes all over the dip. Garnish with fresh rosemary and black pepper. Serve with grilled bread, pita chips or crackers. Enjoy!
