WHIPPED FETA WITH ROASTED ONIONS & GARLIC✨

one of my most viral recipes is my whipped feta dip- however, lots of people complained about roasted tomatoes & olives with it. SO I’m sharing with you a new way to top it- with roasted garlic & onions! don’t forget to serve them with my homemade pita chips 🤤 check out the recipe below enjoy xx 

Whipped Feta with Roasted Garlic & Onions 
Serves 4 
Roasted Veggies 
2 garlic cloves 
1 red onion 
4 tbsp olive oil, divided 
2 tbsp salt 
2 tbsp black pepper 
1 tbsp balsamic vinegar 
Whipped Feta 

8 oz. feta cheese, crumbled 
1/2 cup olive oil 
1/4 cup whipped cream cheese 
1/4 cup water 
2 tbsp honey 
lemon zest 
salt + pepper 

1. Preheat oven to 400F°. Remove all loose papery layer from both onions and garlic. Slice the bottom & top off of the onion and place on a piece of tin foil. Cut the top off of the garlic cloves and place each clove on its own sheet on tin foil. Add olive oil, salt, pepper & balsamic vinegar to onion and wrap, but leave the top of the onion exposed. Add olive oil, salt, pepper to garlic and wrap up the entire bulb in tin foil, covering the top. Place in baking dish and roast for 40 minutes. 
2. Add crumbled feta, cream cheese, water, 1/2 cup EVOO to a food processor. Process for 2-3 minutes. Add lemon zest, black pepper and honey to the mixture and process for 2 minutes.
3. Add feta dip to a bowl and add roasted veggies on top. Drizzle olive oil all over the dip & veggies. Serve with my homemade pita chips (recipe posted a few days ago) and enjoy!
