LAST RECIPE OF 2020!💥 Wow, 2020 what a year. A year unlike any other. A year that has been extremely challenging and has tested our limits like never before. Please remember to reflect on how far YOU have come this year and CELEBRATE EVERY WIN! No matter how big or small. One of the best things of my year has been creating meaningful & deep connections with all of you. Healthy Chocolate Chip Banana Pancakes 
Serves 1 

Ingredients 
1 ripe banana, mashed
2 tbsp paleo flour 
2 tbsp almond flour 
1 egg 
2 egg whites 
1/3 cup vegan chocolate chips (I used enjoy life brand) 
2-3 drops of monk fruit drops (you can also use stevia or agave) 

Directions 
1. In a bowl, mash ripe banana. mix together all ingredients. Heat a medium size pan over medium heat. Scoop out 1/4 cup of the pancake batter and pour it into the center of the pan. 
2. Let sit for 2-3 minutes or until batter is bubbling and the edges start to flip. Flip pancake and let sit for 2-3 minutes. Repeat until all the batter is used. Topped with sliced fruit & maple syrup. Enjoy! xx
