ROSEMARY BROWN BUTTER HASSELBACK SWEET POTATOES 🍠

Rosemary Brown Butter Hasselback Sweet Potatoes 
Serves 4

Ingredients
4 medium size sweet potatoes
3 tbsp butter
2 rosemary twigs 
6 cloves garlic 
Flakey salt + pepper

Directions
1. Preheat oven to 425F degrees. Wash sweet potatoes and pat dry. Slice potatoes (one potato at a time) very thinly. Do not cut all the way through to the bottom- leave about 1/4 of the sweet potato attached. Repeat with the other 3 potatoes. 
2. Place potatoes in a cast iron skillet or a lined baking sheet with 4 cloves of garlic. Drizzle with 1 tbsp of olive oil and bake for 20 minutes. 
3. In a small size saucepan, add butter and heat on medium temperature. When butter begins to bubble, add rosemary and 2 cloves of garlic. Do not stir. Once the butter is a deep brown, turn off heat. Remove garlic cloves & rosemary twigs from the butter. 
4. Take potatoes out of the oven and pour the butter & rosemary all over the potatoes. Bake for another 15-20 minutes or until potatoes are tender. Remove from the oven and using a spoon drizzle the butter from the bottom of the skillet all over the potatoes. Top with flakey salt and pepper. Serve immediately and enjoy!
