Roasted Red Pepper & Burrata Penne
Serves 4
 
Ingredients
1 Box Barilla Penne 
1 Jar Roasted Red Peppers
1 Garlic Clove, chopped
1 tbsp Extra Virgin Olive Oil
1/2 Sweet Onion
1 cup Chicken Stock
1/4 cup Heavy Cream
1/2 cup Tomato Sauce
1/4 cup fresh basil, packed
1 Burrata 
1/4 tsp Red Chili Flakes
Salt + Pepper to taste 
 
Directions
1. Bring a large pot of water to a boil. Cook Barilla Penne for 11 minutes for al dente pasta. 
2. In a medium size pan, heat olive oil over medium-high heat and add garlic and chopped onions. Saute for 3-4 minutes until onions have softened. 
3. In a blender, add roasted red peppers and chicken stock. Blend on high for 30-45 seconds until mixture is smooth. Add cooked onions and blend for 15-20 seconds until smooth. 
4. Pour the mixture into the saucepan and add cream, tomato sauce, salt + pepper and red chili flakes. Stir together. Let mixture simmer on low-medium heat for 10-15 minutes. 
5. Drain Barilla penne and add to the saucepan. Stir together to make sure the pasta is evenly coated. Add Burrata on top and garnish with basil, black pepper, and red chili flakes. 
6. Serve and enjoy!
