In honour of #ItalianHeritageMonth, I am excited to be sharing my newest barillacanada recipe, Spaghetti alla’Amatriciana! 🍝 I first tried this dish in Parma, Italy with #BarillaCanada while attending the Pasta World Championships! I am very grateful to have had these experiences with Barilla and now be able to apply the skills and techniques learned abroad into my cooking. Spaghetti alla’Amatriciana Recipe⁣
Ingredients⁣
1 box of barillacanada Spaghetti ⁣
1/2 white onion, chopped⁣
2 tbsp of extra virgin olive oil⁣
2 tbsp of tomato paste⁣
8 oz. of pancetta, sliced into thick cubes ⁣
2 cloves of garlic, chopped ⁣
1 tsp of red chilli flakes (optional)⁣
1 can of San Marzano tomatoes, chopped ⁣
1/4 cup of white wine⁣
1/2 cup of freshly grated Parmigiano Reggiano ⁣
Salt and pepper⁣ ⁣
Directions⁣
1. Heat 1 tbsp of EVOO in a medium size saucepan over medium heat. Add garlic and cook for 2-3 minutes. Add pancetta, stir frequently. Add in white wine + reduce heat to medium-low. Once pancetta is cooked, place into a bowl and set aside. ⁣
2. Heat EVOO over medium heat and add garlic. Saute garlic and add diced onions. Saute onions for 4-5 minutes and add tomato paste, stir. Add in chopped San Marzano tomatoes, stir frequently.⁣
3. Add cooked pancetta into the skillet, bring sauce to low heat and cook for 10-12 minutes. Stir frequently. Add salt + pepper, red chilli flakes. ⁣
4. Bring a pot of water to boil. Add in Barilla spaghetti and cook al dente for 10-11 minutes. Reserve 1/4 cup of pasta water. ⁣
5. Add pasta water to sauce and let simmer for 2-3 minutes. Strain pasta and return to the saucepan, stir. ⁣
6. Plate pasta and garnish with freshly grated cheese. Enjoy!
