Makes 15 large cookies or 24 smaller⁣
Raspberry jam—⁣
2 1/2 cups frozen raspberries, thawed⁣
3 tb chia seeds⁣
3 tb maple syrup⁣
1 tb cornstarch/arrowroot/tapioca⁣
⁣
Cookies—⁣
1 cup cashew butter⁣
2 eggs (sub: flax eggs)⁣
1/3 cup maple syrup⁣
1/2 cup coconut sugar⁣
1 tb vanilla extract ⁣
1 tb orange zest⁣
3 tb orange juice⁣
1 1/4 cups coconut flour (may need 2 tb more depending on how liquidy your cashew butter is!)⁣
1/2 tsp baking soda⁣
⁣
Preheat oven 350. Make the jam. Add all of the ingredients except cornstarch and stir. Bring to a low boil, then turn to low heat and simmer for 10 minutes. Next, mix 2 tablespoons water and cornstarch forming a slurry. Add the slurry and stir. Remove from heat and allow to cool and further thicken for 15-20 minutes. While jam is cooking, make the cookies. In a medium bowl, beat together the cashew butter, eggs, maple syrup, coconut sugar, vanilla, orange zest and juice until smooth. Add the coconut flour and baking soda, and mix until there are little to no clumps. Let the dough sit for 3-5 minutes so the coconut absorbs, making the dough easy to work with. If its not, add 1 tablespoon more. Line a baking sheet with parchment paper. Oil your hands so it’s easy to form balls. Take 2-3 tablespoons of dough and a form a ball and place on baking sheet. Repeat. Allow space for the cookies to spread a bit. Use your thumb or measuring spoon to make a large indent in the center of each ball and bake for 9-10 minutes. When they come out of the oven, press the indent again. Cool for 10 minutes, then add 1 heaping tablespoon of jam into each cookie, more orange zest if desired, and serve. #holidaycookies #thumbprintcookies #healthybaking⁣
