IMMUNITY PASTINA, so good l've made it 5 times in the last few weeks. Idk about you, but the end of year burnout is real and this soup is just so comforting, nourishing and supports a strong immune system. You can add chicken if you'd like or do what I do and use chicken bone broth for more nourishment and protein. ENJOY and don't forget to tag me in your creations so I can repost sa. Makes 6 servings 1/4 cup butter, salted (@kerrygoldusa) 3 carrots, peeled and chopped (~1 1/2 cups) 2 celery stalks, chopped finely (~1 cup) 1 small yellow onion, diced finely (~3/4 cup) 3 cloves garlic, mashed 1 cup pastina (any tiny pasta shape, I like stars) 6 cups chicken bone broth 1/2 tsp kosher salt 1 tsp turmeric 2 eggs (@vitalfarms) 3/4 cup grated parmigiano reggiano cheese 1 lemon, juiced Garnish: chopped parsley and chili crisp In a large pot over medium heat, melt the butter. Once melted, add the carrots, celery and onion. Sauté for about 5 minutes then add the garlic. Saute 1 minute more then add in the pastina, broth, salt and turmeric. Stir well and let cook for an additional 7-9 minutes until the pasta is cooked. Turn the heat off. Whisk together the eggs and the cheese into a paste. VERY CAREFULLY ladle 1 cup of the broth into the paste, whisking quickly so the eggs don't curdle. Then you can pour the mixture back into the pot of soup. Add the lemon juice, stir and serve. Add the chili crisp for heat and enjoy! #pastina #soupseason
