Christmas Frittata.  A perfect dish to make for your Christmas buffet
I love it when you can prepare, bake and serve something in the same pan!  I used my cast Iron staub_usa  skillet, but if you don’t have one, you can easily bake this in a casserole dish

Christmas Frittata with Tomato Wreath and whipped pesto ricotta

2 tablespoons olive oil
1 red bell pepper diced 
1 medium onion diced
2 cloves garlic chopped 
5 ounces baby spinach leaves
1/2 cup milk
1/2 cup sour cream
12 large eggs
Salt and pepper to taste 
1 tsp Italian seasoning 
1/4 tsp chili flakes
1/2 tsp garlic powder 
1 cup crumbled feta cheese
1/4 cup chopped fresh parsley

Preheat the oven to 350F
Heat the oil in a large oven proof skillet.  Add the peppers and onions and cook, stirring often, for 5 minutes. Season with s&p. 
Stir in the spinach and cook stirring often, until the spinach wilts. Remove the pan from the heat and cool for a few minutes.
Add in the crumbled feta cheese.
In a large bowl, together the eggs, milk, parsley and sour cream until smooth. Season with salt and pepper.
Pour  the egg mixture over top.
Bake for 40 to 45 minutes, or until the eggs are set.

Whipped Pesto Ricotta: whisk 1 cup of ricotta until light and fluffy. Add 2 tablespoons of pesto, cracked black pepper, pinch of salt and zest of one lemon. 

Tomatoes:  Halve some cherry or grape tomatoes and combine them with a couple tbls of olive oil, chopped parsley or basil, salt and pepper and create a wreath pattern on top of frittata 

*in full transparency, I didn’t have sour cream for this so used ricotta instead.  Worked beautifully.  You can really use any cheese or veggies you want. 

For this frittata, I didn’t actually have any red pepper so used chopped canned artichokes instead and threw in some sun dried tomatoes.  Also subbed out arugula for spinach.  Came out perfect. Don’t be afraid to experiment and use what you have to make it your own!!
