kalejunkie LIFE CHANGING SAUCY SHREDDED BRISKET in the instant pot—bc no one has time to wait 8 hours to eat this deliciousness. I will go on the record and tell you that this is one of the best meals I’ve had in my life, a restaurant could never 😏. The sauce is incredible! Serve as desired—we love truffle mashed potatoes and a side of broccoli!

NOTE: you CAN do ALL the prep in the instant pot bc the instant pot has a saute function. I choose not to bc you will get a better sear on the meat and there’s just more room to do it all in a large pot, then transfer to the instant pot.

Makes 10-12 settings
2 1/2 lbs beef brisket, cut into 2-3 pieces
2 tb avocado oil
3 carrots, peeled and diced
1 small yellow onion, diced
6 cloves garlic, sliced
1 tb smoked paprika
2 tsp dried thyme
1 tsp ground black pepper
1 tsp kosher salt
2 tb tomato paste
1 tb Worcestershire sauce (or steak sauce)
2 1/2 cups beef broth
1 lime, juiced (~3 tb)
Garnish: 1 bunch chives, finely chopped

Generously rub brisket with salt and pepper. In a large pot, add the avocado oil. One pot is very hot, add the brisket pieces, fat side down. Leave undisturbed for 5-6 minutes then flip to the other side once you have a great sear and leave undisturbed for 5 more minutes. Remove the meat from the pot and lower heat to medium. Add the carrots, onions and garlic, sautéing for 4 minutes or so, then add in the spices, tomato paste, Worcestershire sauce and broth. Mix together and let cook for 3-4 minutes then transfer the mixture to an instant pot, and add the brisket back in. Squeeze the lime inside the pot. Cover and set to high pressure for 1 hour 40 minutes. Once done, do a quick release. For the sauce, simply take the liquid and blend using an immersion blender or regular blender. Plate as desired and pour sauce on top. Garnish with fresh chives and enjoy! #brisket #instantpot #instantpotrecipes
