When it comes to meal prep for my family, something that I’ve always done is when I am making meatballs, I double the recipe.  I use one batch that night for dinner and I freeze the other batch for another time.  Having those meatballs stored away in the freezer to be able to use another night is such a smart idea and comes in so handy. 
These chicken Florentine meatballs are filled with spinach and cheese and are so flavorful.  I bake them and served them in a tomato cream sauce but my husband loves them over a salad. However you eat them, I’m sure you will love them.

Chicken Florentine Meatballs

2  eggs, lightly beaten
1/3 cup milk 
1 package (10 oz) frozen chopped spinach, thawed and squeezed dry
1/2 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1 tbls dried minced onion
1 garlic clove, minced
1 tsp Italian seasoning 
1 tsp garlic powder 
1 tsp salt
1/2 tsp pepper
1 pound ground chicken

Preheat oven to 400F. In a large bowl, combine everything except the chicken and mix well to combine. Add the chicken and mix well. Shape into balls.  Grease a baking sheet and place the meatballs down. Bake for 25 minutes. 

Meanwhile make the sauce! 
In a large skillet sauté 3 cloves of chopped garlic and 1/2 cup chopped onion for a few minutes.  Add 1 (28oz) can of crushed tomatoes. I also like to stir in 1 cup of water to the can to get all the tomato out…. Season with salt and pepper and 1 tsp of Italian seasoning.  Simmer for 5 minutes and then stir in 1 cup of heavy cream, 1/4 cup chopped parsley and 1 (6oz) bag of baby spinach. 

Add the meatballs to the sauce and let them simmer together for 10-15 more minutes.  Enjoy over rice, pasta, polenta, farro or spaghetti squash

To freeze cooked meatballs:
Cook the meatballs fully. 
Cool them completely to room temperature.
Flash freeze by spreading the cooled meatballs in a single layer on a parchment-lined baking sheet and placing it in the freezer for 1-2 hours, until solid.
Transfer the frozen meatballs to an airtight, freezer-safe container or a large freezer bag, removing as much air as possible. Freeze
