## Caption

Did you know it’s an Italian tradition to make lentil soup on the 1st of the New Year. Lentils are meant to symbolize wealth and good fortune throughout the year, so let’s make them! 🎊

Ingredients:
3 carrots
3 stalks of celery 
1 1/2 onions 
4 cloves garlic
I can tomato paste
Lentils
Veggie stock (or chicken)
Salt/pepper for seasoning 
Olive oil 

Directions:
Rinse lentils. Combine chopped onions, carrots, celery, lentils in big pot with veggie stock. Cook for about hour. Reserve 1/2 onion and garlic for other pan. Then after an hour saute 1/2 onion, garlic in olive oil till translucent, then add tomatoe paste. Once combined pour into pot with lentils and cook for another 1/2 hour. Happy New Year!
