Emma’s Black-Eyed Peas
Ingredients:
-4 tbsp butter
-1 onion, diced
-1 green pepper, diced
-1.5 tsp garlic, minced
-1.5 tsp salt
-1/2 tsp pepper
-1/2 tsp dry mustard
-1/2 tsp garlic powder
-2 15oz cans of black eyed peas
-12 oz Eckrich smoked sausage (I used turkey), sliced
-2 tbsp tomato paste
-1 cup red wine or burgundy wine
-1 bay leaf
-2 cups cooked rice
Directions:
1. Preheat the oven to 350 and grease a baking dish.
2. Sauté the onions & peppers in butter over medium heat for about 7 minutes or until soft.
3. Add in the spices & garlic and sauté for another 2 minutes.
4. Stir in the peas and cook over low heat for about 5 minutes.
5. In a small saucepan, heat the red wine, tomato paste & bay leaf. Simmer for 8 minutes and then remove the bay leaf.
6. Pour the bean mixture into the baking dish, spread the sausage evenly over the top and pour the wine mixture over the sausage.
7. Bake at 350 for 50 minutes then stir in the cooked rice.  Enjoy!
