QUESILLO Venezolano🍮🇻🇪🇻🇪🇻🇪

Today we are celebrating making the iconic Venezuelan Quesillo, their version of a flan :) it is VERY rich and creamy!

✨Ingredients:
-60 ml water
-150 gr sugar
-415 ml condensed milk (1 can)
-5 medium eggs
-355 ml evaporated milk (1 can)
-30 ml dark rum (1 oz)
-150 gr powdered milk
-90ml water

Preheat oven to 350 F. To a small saucepan, add water followed by sugar and heat over medium heat; do not stir to avoid crystallization. Cook for 10-15 minutes until it darkens and reaches a deep golden color. Pour immediately into the flan pan (round or bundt) and cool down. In the meantime, add condensed milk, eggs, evaporated milk, rum, powdered milk, and water into a blender and blend at medium speed in 20-second intervals. Make sure the condensed milk doesn’t stick to the sides of the blender, and scrape it using a spatula. Continue mixing until reaching a smooth consistency with no clumps. If you want, you can strain it if you see little bits of egg. Pour the mixture into the pan on top of the caramel, and cover using aluminum foil. Place inside a larger pan and pour hot water into the larger pan for a Bain Marie (hot water bath). Carefully place the pans inside the middle rack of your oven and cook for 45 minutes. Remove the foil and cook for an additional 5-15 minutes, depending on what the quesillo looks like. It should begin to set and harden a bit without burning. Trust your instincts; if it doesn’t look ready, cook a little longer :) Remove from the water bath and cool down on a wire rack. Once it reaches room temperature, refrigerate for at least 6 hours. 

To unmold, use a toothpick or thin knife to unstick the edges. Place a large plate on top of the pan and flip it around in one swift, confident motion. You may need to tap it a little bit to release it. Enjoy and keep refrigerated for up to 3 days :)
