We’ve had berry mojitos, grilled camembert with blackberries, and now we’re closing things out with juicy pork chops and the most flavor-packed blueberry chutney!! It’s sweet meets savory in the best way — spiced, tangy, and fresh!! Elegant, easy, and perfect for summer hosting.

BLUEBERRY CHUTNEY PORK CHOPS
Time: 20 minutes active | Serves: 4 people

4 bone-in pork chops (1-inch thick)
1 tablespoon and ½ teaspoon kosher salt
¼ cup and 1 tablespoon brown sugar
1 teaspoon black pepper
2 tablespoons olive oil
12 ounces fresh Driscoll’s blueberries
1/2 small red onion, finely diced
1/4 cup apple cider vinegar
1-inch piece fresh ginger, grated or minced 
1/8 teaspoon red pepper flakes

The night before:

Mix 1 tablespoon kosher salt, 1 tablespoon brown sugar, and 1 teaspoon black pepper in a small bowl. Rub this mixture all over the pork chops. Place on a plate, cover loosely with plastic wrap, and refrigerate overnight.

Make the blueberry chutney. In a medium saucepan, combine 12 ounces Driscoll’s blueberries, 1/2 diced red onion, 1/4 cup apple cider vinegar, 1/4 cup brown sugar, 1 to 2 teaspoons minced fresh ginger, 1/2 teaspoon kosher salt, and 1/8 teaspoon red pepper flakes. Bring to a boil, then reduce heat and simmer for 15 to 20 minutes, stirring occasionally, until the blueberries burst and the mixture thickens. Let cool completely, then refrigerate overnight.

Day of serving: 

Heat grill to medium-high heat (between 400 and 450°F). Cook over direct heat for 6 to 8 minutes per side, or until golden brown and cooked through. If you are experiencing flare ups (it can sometimes happen with pork chops), cook over indirect heat instead. 

Serve the pork chops topped with the blueberry chutney. #finestberries #sweetnessworthsharing
