Gameday 🐔 sandwiches!!! Football is almost here, so let’s think about football food: 

Buttermilk fried chicken sandwich with sweet & spicy sauce, homemade pickles, and apple cider vinegar slaw. Cheers!!! 

-Thinly slice a cucumber or two (I made very thin slices since I’m using them the same day & they’ll absorb the brine faster) and place is a glass jar. Layer with fresh dill & a couple cloves of garlic. For the brine, slowly bring 1 cup white vinegar, 2 cups of water, 1 tablespoon of salt, 1/2 tablespoon of sugar, and some pickling spice to a low simmer. Once the sugar & salt are fully dissolved let it cool for 5-10 mins, pour into your jar, and refrigerate. These will last about a week. 

-Get some skin-on chicken thighs and marinate in 1 cup of buttermilk, 1 tablespoon of salt, 1/2 teaspoon of paprika & garlic powder, 1/4 teaspoon of cayenne. Add a few dashes of hot sauce. Marinate at least 2 hrs!! 

-For the sauce: I don’t like mayo so I always substitute Greek yogurt, but mayo is fine. 1 cup of quality Greek yogurt, one finely chopped Fresno chili (the more seeds you leave the spicier it’ll be), finely chopped chives, the zest of one lemon, 1 tablespoon of lemon juice, 1-2 tablespoons of honey, a pinch of cayenne, a few dashes of hot sauce, S&P to taste. 

-For the slaw vinaigrette: 1 tablespoon of Dijon, 2 tablespoons of apple cider vinegar, 1 tablespoon of honey, S&P, and slowly drizzle in olive oil and whisk constantly to emulsify. Mix with shredded cabbage and carrots. 

-Remove your chicken from the refrigerator 35-45 mins before you’re going to cook. Make a flour dredge with the same ingredients and amounts in your buttermilk marinade, and add fresh cracked black pepper. Dredge the chicken in the flour, add back to the buttermilk, and then back into your dredge. Place on a wire rack. 

-Heat your oil (I used avocado oil) to 370 degrees. Carefully drop your thighs and cook (flipping once) for 8-10 mins. Check your oil temp and maintain heat about 325 degrees. Remove to a wire rack and immediately sprinkle with some kosher or finishing salt. Assemble your sandwich and enjoy.
