Sunday Roast over Creamy Mashed Potatoes.  Was gifted a 5lb Bone In Chuck Roast from Wagar Cattle Co. in Nash OK.  Was outstanding!  Best roast we have made yet!  Details below. Have a great week! SUNDAY ROAST -5lb Bone In Chuck Roast, trimmed down to 4lbs total and halved -1 Yellow Onion, sliced -3 Carrots, chopped -5 Cloves Garliic, diced -2T Tomato Paste -1C Red Wine, we used Cabernet Sauvignon  -4C Beef Broth -1-2T Beef Bouillon  -1tsp Dried Rosemary -1tsp Dried Thyme -2 Bay Leaves -8oz Baby Bella Mushrooms, halved **Pre-Heat Oven at 325 **9.5 Quart Dutch Oven, medium heat, add oil of choice, we used Olive Oil **Heavily season Roast with Salt and Pepper **Sear roast for about 4min per side and set aside **Add Onion & Carrots, cook a few minutes **Add Garlic then add Tomato Paste to middle, cook a few minutes **Bring it together and add wine, deglaze a few minutes **Add Beef Broth and Beef Bouillon, mix well **Add Beef Back in, add Rosemary, Thyme and Bay Leaves **Cover in Oven for total of 3 hours  **Sauté Mushrooms in skillet for about 10min w olive oil, S&P **Add Mushrooms to Dutch Oven after 2 hrs **At 3 hours is should be fall apart tender, pull meat out, shred and return **Ready to Serve! CREAMY MASHED POTATOES -3lbs Yukon Gold potatoes -1 Stick unsalted Butter -3/4C Heavy Cream -2 Cloves Garlic -Rosemary, Thyme, Salt, Pepper to taste **Peel and quarter potatoes, boil in pot until fork tender **Strain potatoes, add butter, heavy cream, garlic to pot, melt and mix **We use a ricer on potatoes and return to pot with cream and butter **Season as you prefer and bring together **Ready to serve #sundayroast #potroast #chuckroast #3piecesofpecan #fyp
