🇰🇷 Korean Fried Chicken Skewers 🥵

These skewers are a riff on “So-tteok So-tteok” (소떡소떡), a classic Korean street food made with mini smoked sausage and tubular rice cakes called garae-tteok (가래떡). This version swaps the sausage for Korean fried chicken and replaces the usual ketchup glaze with sbrbbq Barbecue Sauce. Different? Yes. Better? Also yes. Do me a solid and say no to dry January. You deserve better.

Chicken Nuggets
2 pounds chicken thighs, ground
1 tsp white pepper
1 tsp Korean chili flake
2 tsp kosher salt, more to taste
Dredge
1/2 cup cornstarch
1 tsp baking powder
Kosher salt

Batter
1/2 cup cornstarch
1/2 cup all-purpose flour
1/2 tsp baking powder
2 tsp kosher salt
1/2 cup cold water
1/2 cup vodka
Neutral oil, for frying

Rice Cakes
48 Korean rice cakes (garaetteok)

Sweet Baby Ray’s Korean Glaze
1/2 cup Sweet Baby Ray’s Original Barbecue Sauce
2 Tbsp gochujang
1 Tbsp soy sauce
1 Tbsp rice vinegar
1 Tbsp honey
1 tsp grated garlic
1 tsp grated ginger
Toasted sesame seeds
Sliced scallions

1. Purée chicken, white pepper, chili flake, salt, and MSG until smooth and paste-like. Shape into 3/4-inch logs, cut into 3-inch pieces, and freeze on a parchment-lined tray at least 2 hours or overnight.
2. Whisk dredge ingredients and set aside.
3. Whisk batter dry ingredients. Slowly whisk in water and vodka until thin and paint-like.
4. Heat oil to 300°F. Lightly dredge frozen chicken, dip in batter, and fry until golden, about 5 minutes. Rest 5 minutes.
5. Increase oil to 350°F and fry again until deeply golden and crisp. Drain.
6. Cook rice cakes per package instructions and drain well.
7. Simmer glaze ingredients 3–5 minutes until slightly thickened. Cool briefly.
8. Toss chicken and rice cakes in sauce then skewer. Grill or torch until lightly charred and crispy.
