This warm, comforting French toast bake is perfect to prep for the week, made with better-for-you ingredients while still giving that “did I just eat dessert?” vibe 😉 It uses a few simple swaps that make it easy to fit into my new year routine: lower sugar, protein-rich Greek yogurt, and ryzesuperfoods Mushroom Coffee to support calm energy and mental clarity. Ingredients:
6 slices sprouted grain or sourdough bread, cubed
3 eggs
1/2 cup plain Greek yogurt
1 1/2 cups unsweetened almond milk
1/4 cup pure maple syrup
2 tbsp RYZE Mushroom Coffee
2 tbsp cocoa powder
1 tsp cinnamon
1 tsp vanilla extract
Pinch of salt
Optional: handful of dark chocolate chunks or chips

Directions:
 • Preheat oven to 350°F and lightly grease an 8×8 baking dish. Add cubed bread in an even layer.
 • In a bowl, whisk together eggs, yogurt, milk, maple syrup, RYZE, cocoa powder, cinnamon, vanilla, and salt until smooth and no clumps remain.
 • Pour mixture evenly over the bread, pressing gently so it absorbs.
 • Sprinkle with chocolate chips if using.
 • Let sit 5–10 minutes (optional, but recommended for a creamier texture).
 • Bake 25–30 minutes, until set with a soft center and lightly golden edges.
 • Serve warm with Greek yogurt and a drizzle of maple syrup. Store leftovers in the fridge for 2–3 days. Enjoy!
