Brown sugar banana coffee muffins - inspired by banana lattes and a brown sugar shaken espresso. I had bananas, I had my 30 oz. tub of icelandicprovisions skyr, and it only felt right 🙂

#ad Honestly, #IcelandicProvisions asked for a Nordic inspired recipe, and I’m not sure I delivered, but what I CAN say I captured is the easy, cozy Nordic lifestyle that I felt when I visited Iceland last summer. If there’s anything I want to be eating when I’m warming up from an Icelandic winter, it’s these.
