Slightly crisped yuca con mojo! A variation from the original, because I was craving yuca fries and also wanted an excuse to call a bowl of yuca a full meal (which tbh…it is)

As a midwest queen, yuca wasn’t one of the foods I was introduced to (like…ever), but thankfully, through so many friends and resources, I’ve become very familiar with this South American staple. Also I appreciate endlessly how it is one of the most affordable fluffy little carbs in town. Emphasis on fluff 😍

Yuca con mojo roughly translates to “cassava in garlic sauce” and is a Cuban dish where yuca is slow marinated in citrus and garlic. While this recipe is far from the original by using a quick dressing instead of a marinade, I wanted to pay homage to the version that inspired this. (And also inspired me to finally get into my yuca phase)
