Escarole and white beans soup is one of my favorite soups as it is so easy to make yet so comforting and delicious. I’m adding alfrescochicken Tastes Just Like Chicken Parm Sausage as a better-for-you, flavorful option—plus, it comes fully cooked and is so easy to prep! Packed with 10 grams of protein per serving and made with mozzarella, parmesan, Romano cheeses, sun-dried tomatoes, garlic, and basil, the sausage makes my soup extra hearty and tasty. Ingredients:

• 1 package of Tastes Just Like Chicken Parm Chicken Sausage alfrescochicken diced
• 2 Tbsp olive oil
• 1 onion diced
• 2-3 garlic cloves minced
• ¼ tsp chili flakes
• 1 tbsp tomato paste
• 1 bunch of escarole lettuce washed rinsed and chopped
• 1 tsp salt or more
• 2 cans (15oz) cannellini beans
• 1 cup of broth
• Parmesan rind
• Parmesan cheese to serve
 
Cooking Instructions:

1. In a large pot drizzle olive oil and transfer sausages into the pan over medium high heat.
2. Cook the sausages for 5 minutes stirring around in medium heat, mixing around.
3. Remove sausages from the pan.
4. Add onion and garlic and cook until the onion gets translucent.
5. Add the chili flakes and tomato paste and keep stirring.
6. Add the coarsely chopped escarole lettuce, season with salt and cover with a lid so the lettuce can wilt down.
7. Remove the lid and add beans and bring sausage back into the pot.
8. Pour one cup of broth and one cup of water.
9. Add a parmesan rind(optional) and simmer the soup for 20 minutes.
10. Serve with freshly grated parmesan cheese and crusty bread.
11. Enjoy!
