Tabbouleh is one of my favorite salads, so I am turning that into a full dish by adding Air Fried Butterfly Shrimp. Have you tried it yet? It’s super crispy, light, and crunchy, but never greasy because Gorton’s air fries the shrimp for you! No need for an air fryer, you can just cook it in the oven like I did. The perfect protein to add to my dish and keep on hand in your freezer for making light and easy meals any day of the week. Go ahead and try the shrimp and thank me later! Ingredients
1 package of Gorton’s Air Fried Butterfly Shrimps
2 cups cooked orzo pasta
2 cups cherry tomatoes halved
1 cup cucumber diced
½ cup scallions chopped
1 cup mix of fresh herbs, parsley, mint, and chives
Juice and zest from 1 lemon
1/4 cup olive oil
1 tsp salt
¼ cup crumbled feta cheese
 
Instructions
Preheat the oven at 425F degrees.
Place Gorton’s Air Fried Butterfly Shrimps into a baking sheet pan.
Bake for 20-25 minutes as per package instructions.
In a large bowl toss together orzo, tomatoes, cucumber, scallions, and fresh herbs.
Season with salt.
Grate lemon zest and squeeze juice from 1 lemon.
Pour olive oil into the bowl and toss to combine.
Add feta cheese and toss gently.
Remove shrimps from the oven.
Serve pasta salad topped with shrimps and crumbled feta and lemon slices.
