Hotate Hokkaido Scallop
Harvested from the cool, kelp-rich waters of Hokkaido, these scallops naturally help filter and sustain the ocean’s ecosystem. Because the surrounding waters are largely self-sufficient, the result is a scallop that’s exceptionally healthy, sweet, and creamy.

We accentuate this with a black sesame emulsion, compressed orange, fresh chive, and sea salt from Bali.
