Here’s my mom’s recipe for Vietnamese Caramelized Pork with Quail Eggs and episode 3 of my Taste of Vietnam Series. It’s not really healthy because there is a lot of sugar in this recipe. I only make this once every few months when we’re craving Vietnamese comfort food. 
Ingredients:
2 1/2 pounds cut up bite size pork spare ribs 
1 can quail eggs packed in water optional
1/4 cup sugar 
1 can of coco Rico soda ( you can also use sprite if you can’t find it)
2 tbsp minced garlic,
3 tbsps fish sauce
1/2 tsp black pepper 
1/2 tsp salt 
1 tsp dark soy sauce 
Instructions:
Heat up a large pan or wok to medium low and add sugar. With a spatula stir sugar around until it dissolves and cook until it reaches a light brown caramel color. Then toss in ribs. Cook for 5 minutes and keep on tossing the meat around so it doesn’t burn. Then add garlic, fish sauce, dark soy sauce and salt. Then pour in the soda and cover with a lid for 7-8 minutes. Then remove the lid, toss in quail eggs and continue to simmer for 2-3 more minutes until sauce thickens. 
We typically serve with rice and a side of vegetable soup for balance. 
Serving size is about 4.
