Spaghetti O’s are a classic childhood favorite, so I made a better for you version, adding mini meatballs for more protein and fun. My recipes are always approachable, easy and packed with flavor and this is one you don’t want to miss! ⁣

Makes 6 servings ⁣
Mini Meatballs⁣
1 lb ground beef⁣
1/2 yellow onion, grated and liquid squeezed out⁣
2 cloves garlic⁣, mashed⁣
1 egg⁣
1/2 cup parmesan cheese, grated ⁣
1/2 cup italian breadcrumbs ⁣
1/4 cup italian parsley, finely chopped ⁣
1 tsp salt⁣
1 tsp oregano⁣
1/2 tsp ground black pepper⁣
1 tb olive oil⁣
⁣
Spaghetti O’s⁣
1 tb olive oil⁣
3 cloves garlic, mashed ⁣
1 28 oz can tomato puree (NOT tomato sauce)⁣
1/2 cup beef broth (OPTIONAL—use if you want a thinner sauce)⁣
3 tb tomato paste⁣
2 tsp granulated sugar or monkfruit⁣
1 tb italian seasoning⁣
1 tsp crushed red pepper flakes⁣
1 tsp salt⁣
1/3 cup parmesan cheese, grated ⁣
1 cup uncooked O shaped pasta⁣
Garnish: fresh basil⁣
⁣
First, make the meatballs. In a large bowl, add all of the ingredients listed above and mix to incorporate very well (beef, onion, garlic, egg, cheese, breadcrumbs, parsley and seasonings). Next, form mini meatballs and place them on plates. In a large skillet over medium heat, add the oil. Once the pan is hot, add the meatballs, browning for 3 min then flipping and continuing to cook and brown for another 3 min. You will need to work in batches. Remove the meatballs from the pan and set aside. In the same skillet, add the oil and garlic over low heat. Add the tomato puree, paste, sugar, cheese and seasonings, mixing well. Add the meatballs back in and coat with the sauce. While the sauce is cooking, bring a large pot of water to a boil with a generous pinch of salt. Add the O pasta, cooking until very al dente (it will further cook when added to the sauce). Drain and add to the skillet with the sauce, coating well. Cook a few minutes more, then plate and serve with additional parmesan cheese and fresh basil.⁣ #spaghettios
