I love Shrimp Scampi and I love roasted shrimp and it makes so much sense to combine the 2. This is the easiest way that I’ve found to put it together.  Roasting the shrimp instead of sautéing it cuts down on the time needed to make it and produces an absolutely delicious dish.

Roasted Shrimp Scampi

2 lb shrimp, peeled and deveined (These shrimp are U-15, but I’ve often used smaller sized with great results) 
1/4 cup olive oil
4 tbls melted butter
5 cloves chopped garlic
1 tsp chili flakes
1/3 cup white wine (I used Chardonnay because that’s what I tend to have in the House)
1 tsp salt 
1/2 tsp pepper 
Juice and zest of one large lemon 
1/2 cup chopped parsley 
1/4 cup chopped basil 
1/2 cup grated Parmesan 

Preheat oven to 400F. 
Combine the shrimp with the oil, butter, garlic, chili flakes, wine, salt and pepper and toss well to coat. 

Arrange it flat in one layer on a sheetpan, and roast for 8 minutes. While that’s roasting, boil a pound of linguini in some salted boiling water until al dente.  Drain the pasta, save 1/2 cup of pasta cooking water. 
In a big bowl, combine the pasta and shrimp with the cooking water, lemon juice and zest, parsley, basil and Parmesan. Mix to combine and platter it up.  Serve with extra grated Parmesan

**I love Parmesan on my Scampi, but if you don’t, feel free to leave it off
