Game day food doesn’t have to be complicated. Pantry ingredients, a handful of cheese, and a skillet is all it takes to make this baked ricotta dip with sweet peppers. Cozy, cheesy, and gone before halftime.

Mini Sweet Peppers Baked Ricotta Dip

Servings: 4
Prep time: 10 minutes
Cook time: 30 minutes

Ingredients
	•	8 oz mini sweet peppers, sliced
	•	3 garlic cloves, minced
	•	1 cup tomato purée
	•	2 tbsp olive oil
	•	1 tsp salt
	•	¼ tsp black pepper
	•	½ tsp oregano
	•	¼ tsp chili flakes
	•	8 oz ricotta
	•	1 cup mozzarella cheese, shredded (divided)
	•	½ cup parmesan
	•	Scallions or parsley, for serving

Instructions
	1.	Preheat oven to 400°F 
	2.	Heat the olive oil in a skillet over low heat. Add the sliced mini sweet peppers, cover with a lid, and sauté for 10 minutes, stirring occasionally, until softened.
	3.	Add the minced garlic and tomato purée. Cook for 5 minutes, allowing the flavors to meld.
	4.	Season with salt, black pepper, oregano, and chili flakes. Remove from heat and let cool slightly.
	5.	Fold in the ricotta, parmesan, and ¾ cup of the mozzarella.
	6.	Transfer the mixture to a baking dish and sprinkle the remaining mozzarella evenly over the top.
	7.	Bake uncovered for 25–30 minutes, until bubbly and lightly golden.
	8.	Finish with sliced scallions or parsley and serve warm.
Perfect with toasted bread, crostini, or crackers, cozy, melty, and deeply comforting.
