Pork butt tips:
1️⃣ Season heavily. The seasoning on the outside has to season the entire butt.
2️⃣ Only spritz if needed/certain spots are looking dry. This was cooked at 325 with no water pan so the spritz was necessary. 
3️⃣ If wrapping, do so when the bark has set. It could be 140 it could be 170. Don’t worry about internal temp. 
4️⃣ Wrap with a flavorful liquid. Apple juice, OJ, beer, Worcestershire etc
5️⃣ Let rest at least 1 hr before shredding. Shred in the braising liquid for maximum moisture and flavor
