Have you seen more beautiful nachos? Try your hand at Chorizo Short-Rib Cast Iron Nachos this weekend - they’re sure to be winners at any #tailgate. See below for the recipe from livefirerepublic. 

To start, I used a single match to ignite Kingsford Match Light coals. It was literally that simple. Once ashed over, I centered the cast iron pan directly upon the grill grates, then warmed a couple tablespoons of avocado oil before sautéing red onion and garlic until just fragrant and golden in color. Next, I tossed in the chorizo and browned until just crispy, then folded in the short rib and prepared until cooked through. The meat was spooned from the pan and set aside to cool.

Note: While I used ground chorizo and short rib, because I love the depth of flavor and heat, you could select any ground meat you like, from pork sausage, ground lamb or turkey, elk or venison.

In the same piece of cast iron I dressed a double layer of salted café-style tortilla chips with the browned meats, then topped with a tangy sweet corn salsa, pickled jalapenos and red onion, a splash of hot pepper sauce, freshly-harvested cherry tomatoes, and finished with plenty of spicy, nacho-style cheddar cheese. The grill lid was closed for 5-7 minutes to allow all the ingredients and essence of the charcoal embers to meld together. The dish was garnished with chopped cilantro and meyer lemon zest.
