Ingredients:
• 1.3-1.5 lbs boneless, skinless chicken breast
• 3 cups salted pretzel twists
• 2 eggs
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1/4 tsp paprika
Salt and pepper to taste

Salad:
• 2 heads romaine lettuce, chopped
• 3 Persian cucumbers, sliced
• 1 cup cherry tomatoes, halved
• 3-4 oz cheddar cheese, cubed

Mustard Dressing:
• 5 tbsp olive oil
• 3 tbsp Trader Joe’s Aioli Garlic Mustard Sauce
• 1 tsp lemon juice
• Salt and pepper to taste

Directions:

Prepare the Chicken:
1️⃣ Preheat your oven to 400°F and line a baking sheet with foil. Place a cooling rack on top and spray it with non-stick cooking spray.
2️⃣ Pound the chicken breasts with a meat mallet until thin, then season both sides with salt and pepper.
3️⃣ Process pretzel twists in a food processor until fine crumbs form (a few larger chunks are fine). Combine crumbs with garlic powder, onion powder, and paprika in a shallow bowl. Whisk eggs in another shallow bowl.
4️⃣ Dip each chicken breast into the egg, then coat with the pretzel mixture, pressing to adhere. Place on the prepared rack and spray the tops with non-stick spray. 
5️⃣ Bake for 15 minutes, flip, and bake for another 15-17 minutes until crispy and cooked through.

Make the Dressing:
Whisk together olive oil, mustard sauce, lemon juice, salt, and pepper. Adjust seasoning or add more olive oil if you prefer a thinner dressing. Refrigerate until ready to use.

Assemble the Salad:
In a large bowl, combine chopped romaine, sliced cucumbers, halved cherry tomatoes, and cheddar cubes.

Finish and Serve:
Let the chicken rest for 5 minutes, then slice and add to the salad. Drizzle with the prepared mustard dressing and toss to combine.
