Crispy chicken cutlets meet stir fry magic 🔥 This weeknight wonder from @elliotts.kitchen is fast, flavorful, and served with our instant rice—aka your shortcut to takeout-level delicious. Get the full recipe below ⬇️

Stir Fry Ingredients:
Broccoli
Pineapple
Carrot, julienned
Salt Pepper Garlic Powder (for the veggies)
1/4 cup teriyaki sauce
Minute Instant White Rice
Toasted sesame seeds, garnish
Scallions, garnish

Cutlet Ingredients:
Chicken Cutlets
AP Flour
3 eggs
1 tbsp teriyaki sauce
Organic Panko Breadcrumb
Salt Pepper

Instructions:
- Prep broccoli, carrot and pineapple.
- In a wok or medium pan, add broccoli and carrots with avocado oil, salt, pepper, garlic powder and let cook for about 3-5 minutes. Add pineapple and teriyaki sauce of choice and let flavors combine for another minute.
- Add 1 cup Minute Rice with 1 cup water to a small bowl. Stir to combine and microwave for 6 minutes covered.
- In a medium bowl add stir fry veggies and rice and mix all together. Set aside.
- Pound chicken breast to an even thickness.
- Get your breading station in order with: AP flour, egg and teriyaki, and breadcrumbs. Salt all three stations and pepper just the breadcrumbs.
- Bread chicken starting with AP flour (pat excess), dip in egg, and then cover in breadcrumbs. Move to a baking sheet and refrigerate for at least 15 minutes (optional).
- In a cast iron pan, add 1/4" of avocado oil and bring to 375F using medium to low heat. You'll know when it's hot enough by putting the handle of a wooden spoon and it starts to bubble.
- Place the chicken breast away from you into the oil and let fry for 2-3 minutes on each side until desired golden brown.
- Once cooked, place on a cooling rack and immediately season with salt and pepper.
- Plate your cutlet with the stir fry mixture on top. Garnish with more teriyaki, toasted sesame seeds, scallions, and more teriyaki sauce. Serve and enjoy!
