2 lbs chicken thighs
8 large flour tortillas 
2 Roma tomatoes (diced)
Bundle or small back of fresh spinach 
1 jar of sun dried tomatoes in oil 

1 cup ranch
1/4 cup minced sundried tomatoes
(Plus 1 tbsp of the oil)
2 tsp fresh or dry basil
2 tsp garlic powder
1 tbsp lemon juice
1 tsp black pepper

1/2 tsp black pepper
2 tsp Creole or Cajun spice
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
3 cups water 

1 1/2 cups white rice 
2 tbsp salted butter 
16 oz of shredded mozzarella cheese
