Zucchini Fritters with Herbs and Rice ✨

Ingredients

For the Fritters:
• 1 cup Minute Instant Basmati Rice
• 2 medium zucchini, grated and squeezed dry
• 1 cup crumbled feta
• 1 cup shredded mozzarella
• 4 green onions, chopped
• 2 tbsp fresh dill, chopped 
• 2 eggs
• 3–4 tbsp flour
• 2 tsp garlic powder
• 1 tsp salt
• ½ tsp black pepper
• Oil for pan-frying

For the Lemon Yogurt Dip:
• 1 cup plain Greek yogurt
• 2 tbsp mayonnaise 
• Zest of 1 lemon
• Juice of ½ lemon
• 1 garlic clove, grated
• ½ tbsp chopped dill
• Salt to taste
• 1–2 tbsp water to thin, if needed

Instructions

1. Make the Fritter Mixture:
- Cook 1 cup Minute Instant Basmati Rice according to package instructions. Once ready, fluff with fork then spread rice on a baking sheet lined with parchment paper to cool.
- In a large bowl, combine cooled instant basmati rice, zucchini, feta, mozzarella, green onions, dill, eggs, flour, garlic powder, salt, and pepper. Mix and add a little more flour if needed, making sure the fritters hold together and aren’t too wet.

2. Cook the Fritters:
- Add enough oil to cover the bottom of a nonstick skillet and heat oil over medium heat.
- Scoop about ¼ cup of the mixture for each fritter, place into the skillet and flatten slightly.
- Pan-fry for 3–4 minutes per side until golden and crispy. Drain on paper towels.

3. Make the Dip:
- Mix together Greek yogurt, mayonnaise, lemon zest, lemon juice, garlic, dill, salt, and water (as needed) until smooth.

4. Serve:
- Serve warm fritters with the lemon yogurt dip. Enjoy!
