	•	1½ lbs fresh green beans, trimmed and cut in half
(or two 12 oz bags)
	•	2 tbsp butter
	•	1 tbsp oil
	•	1 medium onion, finely chopped
	•	16 oz cremini mushrooms, sliced
	•	6–8 garlic cloves, minced
	•	2 tbsp butter (additional)
	•	¼ cup all-purpose flour
	•	1 cup chicken broth
	•	2½ cups whole milk
	•	2 tsp Worcestershire sauce
	•	2 tsp low-sodium soy sauce
	•	1 tsp Dijon mustard
	•	½ tsp salt (adjust at the end to taste)
	•	½ tsp black pepper
	•	1½ cups freshly grated Parmesan cheese, divided
(¾ cup inside the casserole, ¾ cup on top)
	•	2 cups crispy fried onions, divided
(1 cup inside the casserole, 1 cup on top)

Instructions
	1.	Blanch the green beans:
Preheat oven to 375°F. Blanch trimmed and halved green beans in salted boiling water for 3-4 minutes. Transfer to an ice bath, drain, and set aside.
	2.	Cook the vegetables:
In a deep skillet, melt 2 tbsp butter + 1 tbsp oil.
Add onion and cook 3 minutes.
Add mushrooms and cook 8–10 minutes, stirring often.
Add garlic and cook 30 seconds.
	3.	Make the creamy sauce:
Add the remaining 2 tbsp butter and let it melt.
Sprinkle in ¼ cup flour, stir well, and cook 2 minutes.
Slowly whisk in 1 cup chicken broth + 2½ cups milk until smooth.
Add Worcestershire, soy sauce, Dijon, salt, and pepper.
Simmer 3–4 minutes until slightly thickened.
	4.	Combine:
Stir in ¾ cup Parmesan and 1 cup crispy fried onions.
Taste and adjust salt/pepper if needed.
Add the green beans and mix to coat evenly.
	5.	Bake covered:
Transfer everything to a casserole dish.
Cover with foil and bake 30 minutes at 375°F.
	6.	Add the topping:
Uncover the casserole.
Sprinkle the remaining ¾ cup Parmesan and 1 cup crispy onions over the top.
	7.	Bake uncovered:
Return to the oven for 10 minutes uncovered.
	8.	Broil:
Broil 1–2 minutes until golden and crispy on top (watch closely!).
