Fourth of July Coconut Tres Leches Cake ✨

For the Cake:
	•	1 cup all-purpose flour
	•	1½ tsp baking powder
	•	¼ tsp salt
	•	5 large eggs, separated
	•	1 cup granulated sugar (divided: ¾ cup + ¼ cup)
	•	⅓ cup whole milk
	•	1½ tsp vanilla extract

For the Coconut Tres Leches Soak:
	•	1 (14 oz) can sweetened condensed milk
	•	1 (12 oz) can evaporated milk
	•	1 (13.5 oz) can full-fat coconut milk
	•	½ cup heavy whipping cream
	•	1 tsp vanilla extract

For the Whipped Topping:
	•	2 cups heavy whipping cream
	•	¼ cup powdered sugar
	•	½ tsp vanilla extract

Toppings:
	•	½ cup sweetened coconut flakes (toast half for flavor + texture)
	•	Fresh blueberries
	•	Sliced strawberries
	•	Raspberries

Instructions
	1.	Make the Cake:
Preheat oven to 350°F. In a bowl, whisk flour, baking powder, and salt. In a large bowl, beat egg yolks with ¾ cup sugar until pale and thick. Stir in milk and vanilla. In another bowl, beat egg whites until soft peaks form, then slowly add the remaining ¼ cup sugar and beat to stiff peaks. Gently fold the egg whites into the yolk mixture. Fold in dry ingredients.
Grease a 9x13 baking dish with butter (no flour needed). Pour batter in and bake for 25-30 minutes or until golden and a toothpick comes out clean.
	2.	Make the Soak:
In a bowl, whisk together the sweetened condensed milk, evaporated milk, coconut milk, heavy cream, and vanilla. Once the cake is cooled slightly, poke all over with a fork, then slowly pour the soak over the top. Chill for at least 3 hours or overnight to let it absorb.
	3.	Make the Whipped Topping:
Beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread evenly over the soaked cake.
	4.	Decorate:
Mix toasted and untoasted coconut flakes and sprinkle on top. For the flag:
	•	Add 5 rows of 6 blueberries in the top left corner.
	•	Create 6 red stripes across the rest of the cake by alternating sliced strawberries and raspberries. Leave white space between each for the classic red-white-red flag effect.
