Ingredients:
1 lb ground pork
6 oz chow mein stir-fry noodles
1 bell pepper, sliced
½ yellow onion, sliced
2 handfuls baby spinach
1–2 tbsp oil
Chopped green onions, for garnish
½ tsp salt, plus more to taste
½ tsp black pepper

Sauce
• ½ cup low-sodium soy sauce
• 1 ½ tbsp rice wine vinegar
• 2 tbsp honey
• 1 tsp sesame oil
• 4 garlic cloves, grated
• 1 tsp grated ginger

Instructions
• Cook the noodles 1 minute less than package directions, rinse under cold water, and drain well.
• In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger.
• Heat oil in a large skillet over medium-high heat. Add the ground pork, season with ½ tsp salt + ½ tsp
pepper, and cook for 4–5 minutes, breaking it apart as it browns. Ground pork is safe to eat when cooked to
160°F.
• Add sliced bell pepper and onion; sauté for 3–4 minutes until softened.
• Stir in baby spinach; cook 1 minute until wilted.
• Add the cooked noodles to the skillet, pour the sauce over everything, and toss for 1–2 minutes until evenly
coated and glossy.
• Serve in bowls and garnish with chopped green onions.
