Broccoli Cheddar Beef Bowls ✨
Creamy, cheesy, and loaded with all the broccoli cheddar soup flavors — these Broccoli Cheddar Beef Bowls are the perfect cozy fall dinner  broccoli 🥦 

Ingredients
	•	1 lb ground beef
	•	½ tsp salt
	•	¼ tsp black pepper
	•	½ tsp garlic powder
	•	1 tsp butter
	•	½ medium onion, diced
	•	1 medium carrot, grated
	•	4 cloves garlic, minced
	•	2½ cups broccoli florets, chopped small
	•	½ cup milk
	•	2 cups heavy whipping cream
	•	1 tsp Dijon mustard
	•	1 tsp garlic powder
	•	1 tsp smoked paprika
	•	½ tsp salt
	•	¼ tsp black pepper
	•	2 cups sharp cheddar cheese, freshly shredded, plus extra for topping
	•	1 cup Colby Jack cheese, freshly shredded
	•	Cooked white rice or pasta, for serving

Instructions
	1.	Brown the beef:
In a large skillet over medium heat, cook the ground beef with ½ tsp salt, ¼ tsp black pepper, and ½ tsp garlic powder until browned. Remove from the skillet and set aside.
	2.	Sauté the veggies:
In the same skillet, melt butter. Add onion, grated carrot, and garlic. Cook for about 3 minutes, until softened.
	3.	Add the broccoli:
Stir in the chopped broccoli florets and cook for 4–5 minutes, until slightly tender.
	4.	Make the sauce:
Return the beef to the skillet. Pour in milk and heavy cream, stirring and simmering for 5–6 minutes until slightly thickened.
	5.	Season it up:
Add Dijon mustard, ½ tsp salt, 1 tsp garlic powder, 1 tsp smoked paprika, and ¼ tsp black pepper. Mix to combine.
	6.	Melt the cheese (low & slow):
Reduce heat to low. Gradually add cheddar and Colby Jack cheese, a handful at a time, stirring until melted and smooth.
	7.	Serve and enjoy:
Spoon the cheesy broccoli beef mixture over hot cooked rice or pasta. Top with extra cheddar cheese and serve warm.
