Marry Me Chicken Tortellini Soup | Part 4 of My Sunday Soup Series ✨

A creamy, flavorful twist on the viral Marry Me Chicken — turned into the coziest tortellini soup!

Ingredients

For the Chicken:
• 1½ lbs chicken breast or thighs
• 1 tsp paprika
• 1 tsp Italian seasoning
• 1 tsp garlic powder
• ½ tsp onion powder
• ½ tsp black pepper
• 1 tsp salt
• 1 tbsp olive oil + 1 tbsp butter, for searing

For the Soup:
• ½ tbsp oil from the jar of sun-dried tomatoes + 1 tbsp butter
• 1 medium onion, chopped
• 2 carrots, diced
• 2 celery stalks, diced
• 5 garlic cloves, minced
• 1½ tbsp tomato paste
• ½ cup chopped sun-dried tomatoes
• 1 tsp Italian seasoning
• ¼ tsp red pepper flakes (optional)
• 10 cups water + 1½ tbsp Better Than Bouillon chicken base (or 10 cups broth)
• 20 oz cheese tortellini (fresh or refrigerated)
• 1 cup heavy cream, more if needed
• ½ cup grated Parmesan
• A large handful of spinach
• Salt & pepper to taste
• Fresh basil or parsley for garnish

Instructions
1️⃣ Season the chicken with the seasonings listed above. Melt the butter and oil in a large pot, sear the chicken on both sides until golden, but it doesn’t have to be completely cooked through since it’ll finish simmering later. Remove and set aside.
2️⃣ Add ½ tbsp sun-dried tomato oil and 1 tbsp butter, then sauté onion, carrots, and celery for 5–6 minutes until softened.
3️⃣ Stir in garlic and cook 30 seconds, then add tomato paste, sun-dried tomatoes, Italian seasoning, and red pepper flakes.
4️⃣ Pour in the water with chicken base (or broth), scraping up browned bits. Return the chicken and simmer 15–20 minutes until cooked through.
5️⃣ Remove the chicken, shred it, and add it back. Bring to a gentle boil, then add tortellini and cook 1–2 minutes less than the package directions to avoid overcooking. Lower the heat, stir in heavy cream, Parmesan, and spinach, and let everything cook together until creamy and the spinach wilts.
6️⃣ Taste and season. Garnish with fresh basil or parsley and extra Parmesan before serving.
