Spaghetti Squash Bowls with Meat Sauce | Part 13 of My Cozy Weeknight Meals Series ✨

Ingredients

For the Squash
	•	1 large spaghetti squash
	•	Olive oil, salt & black pepper

For the Meat Sauce
	•	1 lb ground beef
	•	½ medium onion, diced
	•	1 medium carrot, finely diced
	•	4 garlic cloves, minced
	•	1 tsp Italian seasoning
	•	1 tsp garlic powder
	•	1 tsp salt
	•	½ tsp black pepper
	•	¼ tsp red pepper flakes (optional)
	•	2 cups marinara sauce (such as Rao’s)
	•	8 fresh basil leaves, torn
	•	1 tbsp butter
	•	Olive oil, for sautéing

Cheese Mixture
	•	1 cup freshly shredded mozzarella
	•	½ cup freshly shredded Parmesan

Instructions
	1.	Roast the squash
Preheat oven to 375°F (190°C). Cut the spaghetti squash crosswise, scoop out the seeds, drizzle with olive oil, and season with salt and pepper.
Place cut-side down on a parchment-lined sheet pan and roast 40–45 minutes, until tender.
	2.	Make the sauce (while the squash roasts)
In a skillet, heat olive oil and butter over medium heat. Add onion and carrot; cook 5 minutes. Stir in garlic, then add ground beef and cook until browned.
Season with Italian seasoning, garlic powder, salt, pepper, and red pepper flakes. Stir in marinara and simmer for 10 minutes. Add fresh basil at the end.
	3.	Assemble the bowls
When the spaghetti squash is cool enough to handle, use a fork to shred the strands inside each half. Scoop out about half of the strands from each and set aside.
Mix mozzarella and Parmesan together. In each squash bowl, add ¼ of the meat sauce, ¼ of the cheese, then the squash strands. Top with more sauce and the remaining cheese.
	4.	Bake to melt the cheese
Return the filled squash bowls to the oven at 350°F for 15 minutes, until the cheese is melted and bubbly.
	5.	Serve
Enjoy straight from the spaghetti-squash bowls, or scrape everything into a regular bowl. Enjoy!

Store any extra meat sauce in an airtight container in the fridge — perfect for a quick meal later in the week.
