Marry Me Chicken Tortellini Soup — aka the creamy, cozy soup version of the viral Marry Me Chicken 😍

Ingredients

Chicken:
• 1½ lbs chicken breast or thighs
• 1 tsp paprika
• 1 tsp Italian seasoning
• 1 tsp garlic powder
• ½ tsp onion powder
• ½ tsp black pepper
• 1 tsp salt
• 1 tbsp olive oil + 1 tbsp butter (for searing)

Soup:
• ½ tbsp oil from sun-dried tomato jar + 1 tbsp butter
• 1 medium onion, chopped
• 2 carrots, diced
• 2 celery stalks, diced
• 5 garlic cloves, minced
• 1½ tbsp tomato paste
• ½ cup chopped sun-dried tomatoes
• 1 tsp Italian seasoning
• ¼ tsp red pepper flakes (optional)
• 10 cups water + 1½ tbsp Better Than Bouillon chicken base or 10 cups chicken broth
• 20 oz cheese tortellini (fresh or refrigerated)
• 1 cup heavy cream
• ½ cup grated Parmesan
• Big handful of spinach
• Salt & pepper to taste
• Fresh basil or parsley for serving

Instructions

1️⃣ Season chicken with paprika, Italian seasoning, garlic powder, onion powder, black pepper, and salt. Sear in olive oil + butter until golden (doesn’t need to be fully cooked). Remove and set aside.
2️⃣ Add sun-dried tomato oil + butter, then sauté onion, carrots & celery 5–6 minutes until softened.
3️⃣ Stir in garlic (30 seconds), then add tomato paste, sun-dried tomatoes, Italian seasoning & red pepper flakes.
4️⃣ Pour in water + chicken base (or broth), scrape up browned bits, return chicken, and simmer 15–20 minutes.
5️⃣ Remove chicken, shred, and add back. Bring to a gentle boil, add tortellini, and cook 1–2 minutes less than package directions.
6️⃣ Lower heat, stir in heavy cream, Parmesan & spinach. Simmer until creamy and spinach wilts.
7️⃣ Taste, adjust seasoning, and serve with fresh basil or parsley + extra Parmesan.
