## Caption

One-Pot Braised Pork and Potatoes | Part 15 of My Cozy Weeknight Meals Series ✨

Ingredients
	•	2 lb boneless pork sirloin roast, cut into chunks
	•	½ cup all-purpose flour (for dredging)
	•	1½ tsp salt, divided
	•	¾ tsp black pepper, divided
	•	2-3 Tbsp olive oil
	•	1 small onion, diced
	•	1–2 celery stalks, sliced
	•	1 Tbsp tomato paste
	•	5-6 garlic cloves, whole
	•	Fresh herbs: a few sprigs of thyme, 2 rosemary sprigs, and 1 sprig of sage
	•	5 medium yellow potatoes, peeled and cut into chunks
	•	2 medium carrots, sliced
	•	3 to 3½ cups water (plus more as needed)

Directions
	1.	Sear the pork:
Toss the pork pieces with 1 tsp salt, ½ tsp black pepper, and a coating of flour. Heat olive oil in a cast-iron skillet or Dutch oven.
Sear the pork in batches — don’t overcrowd the pan so it actually sears instead of steaming. Brown on all sides.
	2.	Build the base:
Once all the pork is seared, return it all to the pot. Add the onion, celery, and tomato paste. Stir and cook everything together for about 3 minutes to build flavor.
	3.	Simmer:
Pour in 3 to 3½ cups of water, add the whole garlic cloves and fresh herbs, and stir to combine. Bring to a boil, then reduce the heat to low, cover, and simmer for 40–45 minutes, until the pork becomes tender.
If you notice the water has reduced too much while simmering, add another ½ to 1 cup of water as needed to maintain a small amount of liquid.
	4.	Add vegetables:
After 40–45 minutes, remove the herb stems. Add the potatoes and carrots, then season with the remaining ½ tsp salt and ¼ tsp black pepper.
Cover again and simmer for another 20–25 minutes, or until the potatoes are cooked through and the liquid has slightly thickened and reduced.
	5.	Finish:
Taste and adjust seasoning if needed before serving.
	6.	Serve:
Serve warm with toasted bread — the pork is tender, the vegetables are soft and flavorful, and the sauce has just enough richness to coat everything beautifully.
